Early American Root Beer From Scratch (Naturally Carbonated!)
In this video Matthew demonstrates how to make old-fashioned homemade root beer from scratch using yeast and home fermentation to produce natural carbonation. He used wild sassafras roots and shows his simple recipe with only using 20 grams of sassafras root bark, 2 1/4 cups of sugar, and 1/8 teaspoon of yeast to produce a delicious homemade soda with all-natural ingredients!

    I've been fermenting for decades and just use a stromg vinegar mix to clean my bottles. I've never used bleach before. If you want to make your own yeast, starter, grab a handful of fresh pine needles place them in a pint jar, fill it with water, add about 2-3 tablespoons of sugar. Mix it well. I about 2-3 days, the culture will be active as the yeast on the pine needles will start comsumimg the sugar. For a gallon of sassafras tea with sugar added off course, use a cup of this starter. In 2 days it will be quite fermented. You can also use kombucha, water kefir, dandelin root culture, etc to make a sparkling probiotic rich brew. Cheers mate!

    A side note about it being a carcinogen. A perfectly legal food ingredient is highly carcinogenic, alcohol. Dose makes the poison.

    The commercial stuff uses artificial flavor because the sassafras was found to be carcinogenic.

    You should use a Ginger bug to make root beer. The Ale yeast will continue to multiply and eventually ferment all the sugar and explode they bottles.

    A little known fact is that since sassafras has medicinal uses the U.S. government has deen using toxins to wipe it out. Same with most medical or edible plants.

    My granddaddy had these growing on his place in Alabama. He just called them Bay Trees. I always thought that was because they grew near the bay or Beaver Pond.

      @@johnr3603 One of the oils in sassafras called safrole was shown to cause cancer in rodent studies but most foragers and herbalists agree that the results of the studies shouldn't be applied to humans because they were fed extremely high amounts and there are no reports of sassafras ever causing cancer in humans. It's similar to how alcohol is carcinogenic but typically only causes problems in very large amounts over extended periods.

    My grandmother had one. We climbed it and called it the helicopter tree, iykyk. They seemed to disappear awhile back. Went on a drive last weekend and saw a ton. I kept exclaiming, "There's a Mimosa!" Now I get this video in my feed, lol.

    Use starsan for sanitizing food contact materials. It is simply an acid than has no off taste. Rinsing undoes the sanitizing. With starsan you don't need to rinse it.

    In the 1940s my Dad was on college break and made 4 or 5 jugs of root beer. He put the glass gallon jugs on his enclosed porch for several days to ferment/carbonate. About the 3rd day he had an appointment so he quickly put the dog on the porch and left. When he came home the dog was whimpering in the corner and broken glass, root beer and dog poop covered the porch. Imagine how the trapped dog felt as those huge grenades exploded one by one.

    This plant grows wild like a weed in my yard .a friend gave me one and told me what it was. I done lots of different drugs in my life .and this one I will NOT touch or thinking of trying.im 50 and still like my weed and shrooms . haven't done LSD in a long time . but this is all over my pr property now it seems to reset itself everywhere and anywhere it's like a weed now my five son is know exactly what it is and they won't even touch it

    Wintergreen leaves are even stronger than sassafras, and birch bark is very strong too, although they all have differences, id like to see someone brew with all 3.

    Sassafras has toxins that are unhealthy for your liver. If you want to partake, fine, but you shouldn’t offer it to others. More specifically, other people’s kids.

    Mate.. bleach is bad.. you can sterilise with a half teaspoon of citric acid in a half pint of water..... mixed with..... .a half teaspoon of sodium metabisulphate in a half pint of water ... to make up 1 pint... just use a little of this to wipe everything with cotton wool and rinse with clean water.. dont sniff it though it'll make your eyes water. ha

    I'm quite familiar with the tree, but have never seen any large quantities of fruit on the trees or on the ground under them. If I had to live off wild fruit, it would be native persimmons. They dry easily in dry weather, just mash them carefully to about 1/4 or less of their normal thickness. The seeds pop out easily when the fruit is fully dried. Pitfalls to avoid though: The fruit must be ripe and of eating quality. The astringent "pucker" will remaiin in underripe fruit or in the fruit from high tannin selections, so don't put the work into preserving persimmon fruit that's not top quality to start with.

    I have seen the roots/tubers turn green when exposed to the sun. This is most likely poisonous. This is a consideration with irish potatoes as well. Must be stored in the dark and thrown away if it turns green from sun exposure.

    Don’t use bleach for cleaning your bottles. Use unscented OxiClean. It’s safer and won’t ruin the flavour with chlorine.

    Informative and well-presented, thank you. I'm 66 and even when I was a kid, major brand root beers were already being made without sassafras. I remember I wasn't a big fan of root beer then, but then I tried a smaller local brand and loved it - clearly they were using sassafras. We do get sassafras trees up my way in PA, not too many, but I love the way they smell when I pick a leaf and bruise it. Not enough of 'em to harvest for their roots, I'm afraid, but I will try to purchase some root.

    My Dad told me they used to make homemade root beer when he was a kid in the 30’s -40’s. They saved beer bottles which were used to make it. Once the preparation was poured into the bottles and sealed with corks, they laid the bottles down flat in the grass and waited…. Sometimes a bottle would pop its cork 😅
